Vibe: A comforting red wine. Decant it, serve it with rich dishes, and let it take its place on the table. It’s a “serious” Chinon wine: dark fruit, earthy notes, smoky ; yet kept in line by Cabernet Franc freshness.

Tasting Note: On the nose: cassis, blackberry, and black cherry, then notes of coffee/cocoa, smoky notes, and a damp forest-floor character (humus, underbrush). On the palate, the attack is broad and dense, with a round core of fruit and fine, well-defined tannins; the freshness prevents any sense of heaviness. The finish is long : dark fruit, toasty notes, smoke, and earthy tones.

Curated by velvet (why we picked it): Old-vine Cabernet Franc in its most authentic expression: depth and power. Domaine Lambert farms organically and biodynamically, harvests by hand, ferments with native yeasts, then gives the wine time: 30 to 40 days of maceration in wood, and aging in 500L barrels for 12 to 24 months. No fining, no filtration. It’s a wine born from healthy fruit and careful work in the vineyard, it was set up to succeed from the start.

Food Pairing: roast leg of lamb, grilled côte de bœuf, beef with porcini, pheasant or guinea fowl, venison (avoid overly sweet sauces), chicken livers with bacon and chestnuts, farmhouse tomme, Cantal/Laguiole, Saint-Nectaire

  • Temperature: 15–17°C
  • Decant: 45 minutes to 1 hour (it helps the tannins relax and the fruit come forward)
  • Drinking window: drink now with decanting ; best after 2–3 years; can cellar 10–20 years.
