Get ready to enchant your partner with this creative menu that promises to warm hearts and brighten your evening!

Salmon tartare, granny smith apple

Ingredients

  • 200 g of fresh salmon
  • 1/2 granny smith apple
  • 1 spring onion
  • 1 lime
  • 1 tbsp. of hazelnut oil
  • 2 tbsp. of lemon juice
  • Espelette pepper

Recipe

  1.  Cut the apple into small cubes.
  2. Put the apple cubes on a plate and pour the lemon juice over them.
  3. Finely chop the spring onion.
  4. Remove the skin of the salmon.
  5. Cut the salmon into small cubes.
  6. Put the salmon cubes in a bowl.
  7. Add the finely grated lime zest.
  8. Squeeze and add the juice to the bowl.
  9. Add the apple cubes and the spring onion. Pour in the hazelnut oil.
  10. Season with salt and Espelette pepper. Taste and adjust the seasoning if necessary.
  11. Cover the bowl and refrigerate for 1 hour before serving. The lime will “cook” the salmon.

Wine and food pairing

This salmon tartare will go very well with a fresh but powerful white wine as a white wine from Touraine. “L’Arpent des Vaudons”, Sauvignon blanc from Domaine Mérieau will be perfect.

 

Prawn and pineapple skewers

Ingredients

  • 6 or 8 raw prawns
  • 1 small pineapple
  • 1/2 black radish
  • 2 tbsp. of honey
  • 1/2 tsp. of of ground chilli
  • 1 clove of garlic
  • 1 slice of fresh ginger
  • the juice of 1 lime
  • 3 tbsp. of olive oil
  • 1 tsp. of cider vinegar
  • salt and pepper

Recipe

  1. Peel the prawns. Cut into 3 pieces. Peel the pineapple and chop the flesh into small triangles.
  2. Cut the radish into slices and cut them into 4. Thread the pieces of prawn, pineapple and radishes onto wooden skewers sticks.
  3. Mix honey, chili, lemon juice, vinegar, pressed garlic, grated ginger, salt and pepper. Add 1 tablespoon of oil and 2 tablespoons of water.
  4. Pour this marinade on the skewers in a hollow dish, and let macerate in the fridge 1 hour turning them from time to time.
  5. Cook the drained skewers in a pan with the remaining oil, turning them halfway through cooking. Reduce the marinade in the pan over high heat, and cover the skewers. Serve immediately with rice.

Wine and food pairing

O.V.N.I” Vin de France from J.Mourat, is a light white wine with notes of tropical fruits and citrus and will be perfect with prawn and pineapple skewers.

 

Chocolate lava cake

Ingredients

  • 100 g of dark chocolate
  • 100 g of butter
  • 50 g of flour
  • 60 g of sugar
  • 2 eggs
  • 2 egg yolks

Recipe

  1. Preheat the oven to 170°C. Butter and flour stainless steel molds.
  2. Melt the chocolate and butter in a bain-marie.
  3. In a large bowl, whisk the eggs and egg yolks with the sugar.
  4. Add the melted chocolate and butter, mix, then add the flour and mix again.
  5. Divide the mixture into the moulds. Bake for 9 to 10 minutes.
  6. Serve the chocolate lava cakes sprinkled with icing sugar.

Wine and food pairing

Opt for bubbles! “J’ose les fines bulles”, a sparkling wine from Domaine Mérieau in the Loire Valley, has fine bubbles and pleasant notes of white fruits. It will go perfectly with this chocolate cake.
